Serves 4

1 oz English Butter
4 oz Streaky Bacon
1 onion (chopped)
2 Carrots (sliced)
3 medium Potatoes (peeled and diced)
1 pint Turkey Stock
6 oz Turkey meat (chopped)
4 oz Peas
1/2 oz corn flour
1/2 pint milk
salt and pepper
Chopped Parsley to Garnish


Method

1) Melt the butter in a large saucepan.
   Fry the bacon, onion and carrots for 5 mins.

2) Add potatoes, and stock.
   Bring to boil, cover and simmer 15 mins.

3) Add turkey, and peas, and simmer for further 10 mins.

4) Blend cornflour and a little of the milk, add the remaining milk.
   Stir into soup, bring to boil, still stirring, season to taste.

5) Serve garnished with parsley.
